Sustainability is built into our everyday operations — not just for Earth Day, but always. We’re committed to reducing waste, supporting responsible sourcing, and creating a specialty coffee experience that’s better for the planet and the people on it.
OPERATIONS
Sustainability is built into how we operate every day. From sourcing to waste management, we’re always looking for ways to reduce our impact and make mindful choices behind the scenes. Here are a few of the steps we take to keep our operations as planet-friendly as possible:
COFFEE PACKAGING
Our retail coffee is packaged in compostable bags, so you can enjoy it at home with less environmental impact. For café use, we skip single-use packaging altogether by receiving all coffee in reusable buckets — a simple shift that helps us cut down on waste and keep our footprint small.
LORING ROASTER
We roast our coffee on a Loring roaster, the most energy-efficient production roaster in the coffee industry. Its innovative design cuts fuel consumption and emissions by up to 80% compared to traditional roasters — giving us beautifully roasted coffee with a much smaller environmental impact.
HOUSE-MADE EVERYTHING
By preparing as much as possible in-house — from almond milk to syrups and spreads — we reduce packaging waste, limit unnecessary transportation, and keep our ingredient sourcing thoughtful and efficient. It’s a small shift that adds up to a lighter footprint.
WASTE
Behind the bar, we compost coffee grounds and sort recyclables daily. We also work with local waste management services to ensure materials are properly handled — not just wish-cycled.
Our cafes are equipped with compost and recycling stations to help divert waste from landfills, making it easy for guests to sort waste responsibly.
THOUGHTFUL SOURCING

We work with importers who prioritize ethical and sustainable practices — including partners in the NKG Bloom initiative. Green coffees come from smallholder farmers supported through access to financing, education, and environmentally responsible farming methods.

We partner with Sante Matcha, who source all of their matcha directly from small farms in Japan. dedicated to sustainable harvesting and production.

We’re proud to serve Straus Family Creamery organic dairy, known for its zero-waste practices, along with Oatly oat milk and our own house-made almond milk — crafted in small batches to reduce packaging waste and keep ingredients simple.
